Dear Colleagues,

Vanilla 2005 Mexico, the International Symposium on the Vanilla Business will be in Veracruz, Mexico, the cradle of Vanilla planifolia. The meeting will be held, on November 15th-16th, at the beautiful, waterfront Fiesta Americana Hotel. Please see below for our meeting’s tentative program.

The Symposium will be preceded by two pre-meeting workshops, held on November 14th, dealing with Vanilla Quality Control and Vanilla Curing Technology.

The Symposium will also be followed, on November 17th, by a post-meeting field trip to a vanilla plantation, curing, processing, and an extraction facility in the region.

The organizing committee is working hard to bring to the meeting the latest information on the vanilla business. We are currently looking for new applications of vanilla products. The use of vanilla is endless.  In the EU and the Middle East there is a growing trend of “back to home cooking.”  New gourmet stores and cooking classes are becoming increasingly popular. The retail sales of vanilla are increasing, as is the use of vanilla. It’s not only for ice cream anymore. Vanilla can also be used in cosmetic products, and even for medicinal purposes Green beans are rich with special natural products, such as enzymes, sugars, fats, antibacterial properties, antifungal properties, and many more.

Registration is now open - Please click here for more details. We strongly encourage students to attend, and provide a discounted cost. In order to register as a student one must prepare a poster presentation to be displayed at the meeting.

Please contact Daphna Havkin-Frenkel at <daphnahf@aesop.rutgers.edu> or daphnahf@aol.com  for any further questions or concerns.

The area is rich in historic and archeological sights as well as many entertainment opportunities.  We have the making of a great meeting.
