The Changing Face of Foodborne Pathogens.

The challenges associated with assuring the microbial safety of foods have increased dramatically in the last 20 years. This talk discusses the occurrence of “traditional” pathogens in unexpected setting, the emergence of “new” pathogens such as Listeria monocytogenes and E. coli O157:H7 and the opportunities they present for novel antimicrobials.
