Potential Health Benefits of Antioxidants in Foods

Plant foods contain a wide array of natural antioxidants and anti-microbial components. The antioxidants in particular not only preserve the food but they also can deliver health benefits to the consumer. The greatest dietary source of antioxidants are fruits and vegetables. Unfortunately the consumer does not reflect that in their consumption. Since the consumer does not seem interested or willing to purchase and consume fruits and vegetables alternative strategies must be considered. The in vivo effects of food antioxidants and how they can be delivered will be discussed.
