The Third meeting on Natural Preservatives will be held this summer on August 20th-24th, 2007 and will consist of a 5 day-workshop.  The work shop will be held, in Foran Hall, Cook College, Rutgers University, New Brunswick, New Jersey, USA.   

After our last two successful meetings in New Jersey and Amsterdam, we plan on continuing with our annual meeting, but due to demand from many colleagues and attendees, we will hold a technical workshop to provide hand on experience in measurement of antioxidant activity.

The objectives of the workshop are: Gain overall perspective to help with the choice of appropriate extraction, and estimation of antioxidant activity in biological materials. Gain familiarity with and competence in the practical measurement of antioxidant activity. Provide scholarly rationale for antioxidant activity and measurement. Conferees are allowed to apply the various laboratory protocols to their own choice of biological material.

This is a highly technical course. Participants will have hands-on experience it the following topics:

Extraction of natural antioxidants (AOX) from different plants
Total phenol assay
Identification of extractable components by HPLC
AOX activity assay of components
    HAT assays: ORAC – hydrophilic and lipophilic
    Lipid oxidation system
    SET assays: FRAP
                      CuPRAC
    MIXED assays:DPPH
                         TEAC (ABTS)
Capstone: test AOX extract in a real food application.
